This post is all about one of my favorite spring vegetable side dishes: roasted carrots and asparagus! These roasted vegetables are so versatile and delicious that they pair wonderfully with almost anything.

I don’t know about you, but once spring hits, I feel like filling my plate with colorful and fresh veggies that will make my meal look and taste 1000 times better and fill me up.
Roasted veggies pair well with almost everything, so they are my go-to side dish when I have no time to spare in the kitchen, but I still want to eat something yummy, healthy, and delicious.
This recipe is SUPER easy and quick. You can prepare it in less than 30 minutes, depending on whether you are using your air fryer or the oven, and it can be the perfect veggie side dish for your Easter family gathering.

Fresh and green asparagus: Choose vibrant green ones in the store to end up with crispy asparagus. You can also prepare this recipe with frozen asparagus if that’s all you have at home. They will be less brittle but still delicious. Choose your favorite defrosting method and let them dry before cooking in the oven or the air fryer.
Carrots take more time to cook, so make sure to have them cooking 5 minutes more than asparagus. Put them in the oven and add the asparagus 5 minutes later. To ensure they cook consistently, cut them in the same size.
Parchment Paper: If you cook them in the oven, utilize parchment paper for easier cleaning and to prevent the veggies from attaching to the pan.
One layer of veggies: whether roasting carrots and asparagus in the oven or the air fryer, make sure not to layer them. They need space to cook well and become crunchy.
Oil and salt: spread oil and salt throughout to ensure the perfect savoring.

Instructions
- Preheat the oven to 400 °F
- Cut the asparagus ends, and chop the asparagus the same size as the carrots.
- Slice the carrots vertically in two
- Rinse the vegetables
Oven
- Place the parchment paper on a baking tray and sprinkle salt and olive oil.
- Stir to ensure salt and oil are well spread on all the carrots and asparagus.
- Add your seasoning. For me, it’s usually cumin and spicy paprika.
- Bake in the oven for 30 minutes, turning once or twice during the cooking.
Air – Fryer
- Place the veggies in a bowl, add oil, salt, and seasoning, and stir.
- Depending on the quantity you prepare, divide carrots and asparagus into batches and cook them separately. Ensure enough space between one piece and another.
- Preheat the air fryer and cook at 400 °F for 15 minutes, turning them once or twice while cooking.
- Serve them with a sprinkle of lemon. Roasted Carrots and Asparagus pair well with chicken and tuna fish or chopped in a grains bowl, like a quinoa bowl.
